  • Bleu d'Auvergne (intensity)

Breads and crackers:

  • Sliced traditional baguette
  • Walnut bread
  • Plain crackers
  • Grissini

Condiments and garnishes:

  • Fig jam
  • Chestnut honey
  • Gherkins
  • Green and black olives
  • Dried fruits (walnuts, almonds, hazelnuts)
  • Fresh fruits (grapes, fresh figs)

The Art of Presentation

Step 1: Choose your board

Opt for a large wooden board (40-50 cm), a slate, or a marble platter. The board should be large enough to avoid a "cramped" look.

Step 2: Arrange the charcuterie

Start with the main pieces (whole sausages or half-slices). Arrange them diagonally to create movement. Fold or roll the Coppa and Chorizo slices to add volume.

Step 3: Add the cheeses

Place the cheeses in different areas of the board. Alternate textures (hard, creamy, veined) and shapes (slices, cubes, portions).

Step 4: Fill the gaps

Fill in the empty spaces with dried fruits, olives, gherkins. Add touches of color with grapes and fresh figs. Arrange the bread around the board.

Step 5: Finishing touches

Add a few sprigs of fresh rosemary or thyme for fragrance and aesthetics. Arrange small cheese knives and toothpicks.

Wine Pairings

  • Truffle Sausage: Côtes du Rhône red, Châteauneuf-du-Pape
  • Comté Sausage: Vin jaune du Jura, Chardonnay
  • Espelette Coppa: Provence Rosé, Tavel
  • Spicy Chorizo: Rioja, craft beer

Chef's Tips

  • Temperature: Take charcuterie and cheeses out 30 minutes before serving
  • Tasting order: Start with mild flavors, finish with more intense ones
  • Quantities: Better too much than not enough - plan generously
  • Timing: Prepare the board 1 hour before guests arrive
