Ingredients
- 1 LAKOUM Chorizo (mild or spicy, depending on your preference)
- 400g pasta (penne, fusilli or spaghetti)
- 400g cherry tomatoes
- 3 cloves garlic
- 1 red onion
- 100ml fresh cream (optional)
- Olive oil
- Fresh basil
- Grated Parmesan
- Salt and pepper
Preparation
Step 1: Prepare the ingredients
Finely slice the red onion and garlic. Cut the cherry tomatoes in half. Slice the LAKOUM chorizo into 5mm thick rounds.
Step 2: Cook the pasta
Cook the pasta in a large pot of salted boiling water according to package instructions (al dente). Reserve 1 cup of cooking water before draining.
Step 3: Sauté the chorizo
In a large pan, heat a drizzle of olive oil. Add the chorizo slices and brown them for 2-3 minutes on each side. The chorizo will release its fragrant paprika oils. Set aside.
LAKOUM Tip: Don't discard the fragrant chorizo oil, it will give the sauce all its flavor!
Step 4: Prepare the sauce
In the same pan (with the chorizo oil), sauté the onion and garlic for 2 minutes. Add the cherry tomatoes and let them stew for 5-7 minutes until they burst.
Step 5: Assemble the dish
Add the drained pasta to the pan with the tomatoes. Mix well. If using fresh cream, add it now. Add a little cooking water if necessary to get a creamy sauce.
Step 6: Finishing touches
Return the chorizo slices to the pan. Add the chopped fresh basil. Season with salt and pepper. Mix gently.
Serving
Serve immediately on warm plates. Sprinkle generously with grated Parmesan and fresh basil. A drizzle of olive oil as a finishing touch enhances the dish.
